Spaghetti Alfredo


This is one of those comfort food dishes. I decided to cope with what I had in the fridge and the covers so nothing really fancy. I always have Parmesan cheese as well as cream in the fridge, and normally dry pasta in the cupboard.  Below is my quick and easy recipe to make spaghetti Alfredo. This is a pretty easy dish to make, and a great week great meal. This recipe doesn’t take long to cook, so its fast.  Its that’s the cook the pasta at the same time as you’re making the Alfredo sauce, that way you don’t have to wait for the pasta to finish.

Recipe

Ingredients
¼ cups of unsalted butter,
¼ cup of all-purpose flower,
1 and ½ cups of Parmesan cheese (shredded or shaved),
1 cup of cream,
3 cloves of crushed garlic,
Dry Spaghetti,
Kosher salt (1/2 cups), and
2L of water.


Instructions:

Bring the pasta water to a boil and then add the half cup of kosher salt. While the water is boiled place is spaghetti in the water. As soon as you place the spaghetti in the water melt the butter in a medium sauce pan. Once the butter is melted and slightly turning brown add the garlic let cook for a few seconds then add the flour and create a rue. Once the flour and is cooked (the flower smell is gone).  Add a cup of cream slowly keeping it warm so that the temperature of the pan doesn’t drop. This creates a more stable cream mixture, and we need to fast or cooking.

What’s the milk is that a simmer slowly add the shredded Parmesan cheese. Keep whisking until the cheese is nice and thick this may take a few minutes as a cheese needs to melt. Keep whisking until the sauce is nice and smooth. By this time the pastor should be cooked. What’s the pasta is al dente drain the pasta water reserving one cup of water to mix into the Alfredo sauce. For the Alfredo sauce into your pasta and add that 1 cup of water into the sauce pin your Alfredo sauce was cooking. For that reserved cup of water into the sauce pin your Alfredo sauce was in. Whisk it around till all the sauce comes out and the water is slightly thickened. Add that water and remaining sauce to the Alfredo sauce and spaghetti. Toss the Alfredo sauce and spaghetti and let’s stand a few minutes. Now your pasta is ready to serve
