Chris' Chicken Fajita's

I decided to post my current favorite Chicken Fajita recipe.   This is a combination of about 3 different recipes, as I wanted it to be a mellow taste with that spicy kick in the end.   I found many are either hot, or mild, with no flavour profile.   My Recipe Ingredients ·         2 Boneless skinless Chicken breasts, thinly sliced; ·         2 Red peppers, thinly sliced; ·         1 Red onion; ·         1 Lime; ·         3 cloves of garlic; ·         Salt and pepper; ·         2 shakes Crushed red pepper flakes; ·         2 drops Green tabasco; and ·         ¼ tsp Chili powder. Directions In a large bowl, place the seasoned chicken, along with the juice from the lime, the crushed red pepper flakes, chili powder, and tabasco.   In a large skillet, heat the olive oil until warm; then add in the chicken.   Once the chicken is white on the outside, add the peppers, garlic, and red onion.   Sauté until the garlic is fragrant and add the remaining s

On a nice summers night there is no better way to cook than BBQ.  I decided to BBQ some chicken breasts with baked potatoes.  I decided to wash it down with some craft beer. What do you like to have with your BBQ chicken?

Pineapple Chicken

Pineapple chicken, is one of our favorite weeknight meals.  It is a fat to cook healthy meal, and tastes great.  It is a modified Chinese recipe, and is made of whole foods.   It is best served with rice, or on rice in my case. The ingredients in this dish are sliced chicken breast or thigh, red and green peppers cut into squares, pineapple, garlic, ginger, brown sugar, soy sauce, chicken broth, hoisin sauce, Pineapple juice, and corn starch.  Its simple to make: cook the chicken until half cooked in your wok or saute pan; then add in the peppers, followed by the pineapple, garlic, and ginger.  Then let cook until the garlic is fragrant and ass the mixture of the remaining ingredients.  To boost the taste, some crushed red pepper can be mixed into the slurry. Creamy Mushroom Chicken

Creamy Mushroom Chicken and Homemade Pasta This is a great, one pot, dish;.  It's not on the light side, so make sure you are hungry.  Its simple to make, and takes just over an hour to prep, then another 30 min to cook.  You can make this with store bought pasta, and just use extra chicken stock.  As I made the pasta from scratch, all I has to do was let it simmer for two min and it was done.  A number of recipes online call for canned milk.  I try to cook with whole foods, as much as possible, so I opted for half and half cream (18%). To make the most if the time, you can cook and prep the pasta at the same time.  I opted to do my meal prep while the pasta was chilling. Chicken Cordon Bleu

Chicken Cordon Bleu This was a tasty meal, and my first attempt at making Chicken Cordon Bleu.  It is relatively simple to make, with plenty or recipes available.  I used fresh chicken, and freshly smoked ham from my local butcher; and made a fresh cream of chicken sauce to go on it.  Many recipes call for you to slice open the chicken breast, and place the ham inside with cheese.  I opted to flatten the chicken, and roll the ham and cheese into it.  This dish is normally breaded, but I skipped that step in an attempt to reduce the carbs.  For this meal, I had it with a side of sauteed vegetables.
