Pineapple chicken, is one of our favorite weeknight meals. It is a fat to cook healthy meal, and tastes great. It is a modified Chinese recipe, and is made of whole foods. It is best served with rice, or on rice in my case.
The ingredients in this dish are sliced chicken breast or thigh, red and green peppers cut into squares, pineapple, garlic, ginger, brown sugar, soy sauce, chicken broth, hoisin sauce, Pineapple juice, and corn starch. Its simple to make: cook the chicken until half cooked in your wok or saute pan; then add in the peppers, followed by the pineapple, garlic, and ginger. Then let cook until the garlic is fragrant and ass the mixture of the remaining ingredients. To boost the taste, some crushed red pepper can be mixed into the slurry.
